Just out of curiosity: in Spanish, the word parsimonia means extreme calmness, slowless, economy of effort more than of money, as in English. Is the same true for that word in French and Italian?

Parsimonie or parsimonia are dealing with economy in general in both French and Italian. You would use parsimony when adding spices to a dish for instance (i.e not too many) or when doing something for which some sort of restrain has to be applied.
